How is this possible?

I am not in any case describe in your link.
I record myself new people
Only registered people can write something in my guestbook.
My case is:
Someone write directly a new phoca guestbook message in my database!

Hi, then you should check all your security settings, passwords to dabase, etc. If someone can access or write something to your database not the right way, then there can be a lot of problems on your server - if the message was directly written to database, then in fact this has nothing to do with the Phoca Guestbook (as it can protect writing the message by used Phoca Guestbook entry way, but the component cannot protect your database against other methods, like e.g. manually writing the entry in phpMyAdmin or through other util or other extension, or similar
