improved theme (like templaza, youtheme, etc)

Just playing with phoca-cart, it's is really great !
Compairing it with Hikashop and virtuemart, Phoca cart is really much better and modern!
BIG compliments to all developers!!

But to be honest, the themes are not modern: no rounding, no accordion, etc..

But no Phoca cart inside. Or can this theme and Phoca cart used together?

You can use any Astroid Framework 3 based template.

Phoca Cart is a standard Joomla extension. You can use any theme you want. Phoca Cart has two different outputs: Bootstrap 5 or Uikit, so in fact it covers most of the Joomla templates.
