Of course, no problem.
Like every option: you're not forced to use it. If you don't need a maximum, then you don't set the maximum.

Sorry I didn't read it properly. You want "max. quantitiy option", I thought you wanted 1 piece as default in download product. Yes, max. quantity per product could be useful...
