Joomla 5.3.0 - Phoca Gallery 5.0.3
if I try to use [Multiple add] in images, either with upload or with images in a server folder, when I do [save and close] phoca gives an error [HTTP ERROR 500] and the Images function is no longer available

Sorry, I cannot confirm this error. I have just tested 'Multiple Add' on one of my local test sites with the J! and PG versions you mentioned and it works as expected (without errors). However, what I see from your screenshot is that you have not selected a category to assign your images to when uploading. This does not throw the error you describe, but it does throw an error and saving is not possible:

Edit 1: Activate the Joomla! debug mode and set Error Reporting=Maximum to get a more detailed error message. Also check the JS console for errors.
Edit 2: Meanwhile I get an error 404 when I call the phocagallery.xml on your site, so I assume that Phoca Gallery has been uninstalled:
