- in global configuration
- in menu link to gallery
- in translated menu link to gallery in Joomfish.
So you need to change the parameters in Joomfish too.
In Joomla! there is a problem with parameters saved in text field - there is no "use global" value for them, so if you are using joomfish, you need to set all the parameters for text field and you cannot use it as "use global"
In parameters component of Phoca Gallery there is other behaviour - if you leave the text field empty you get the global configuration there.

I solved the problem for Phoca Gallery (for menu link) but I cannot solve the problem for Joom!fish or global for Joomla!
