first of alle THX for the great plugins ...

but my site is turkish so i downloaded the turkish files and uploaded them on the ftp

but where can i select the language of the guestbook in my admin panel ?

If you had proper install the turkish translation of joomla and select it by default for admin and site, you have only to install the turkish language pack for Phoca Guestbook with the language installer, or copy tr-TR.com_phocaguestbook.menu.ini and tr-TR.com_phocaguestbook.ini
to /administrator/language/tr-TR/ by FTP.
