Display Sub Categories.. but hide sub-sub categories

Hi all,
I have two main categories, Videos and Photos. There are sub categories in each.
Photos
--Gallery 1
--Gallery 2
--Gallery 3
Videos
--Collection 1
--Collection 2
--Collection 3
I have a menu item called 'Multimedia' that I want to display the root categories, so it would only show:
Photos
Videos
As a submenu of Multimedia I have Photos and another, Videos which have the Filter Parent ID numbers set to the relevant categories. Each of these should display only the relevant categories.
i.e. Photos menus should display
Gallery 1
Gallery 2
Gallery 3
and Videos should display
Collection 1
Collection 2
Collection 3
If I leave Display Sub Categories set to YES in the Global Configuration, I get *ALL* categories displaying under the Multimedia menu, and the Photos and Videos menus display correctly.
If I change Display Sub Categories to NO, the Multimedia menu displays properly, but thew Photos and Videos menus are both empty.
I tried adding a Multimedia category that has Photos and Videos as subcategories, but I then with Display Sub Categories set to YES get either *ALL* Categories in the Multimedia menu and none for the Photos and Videos menus, or with Display Sub Categories set to NO, I get nothing for any menus.
Am I being daft? Is there a work around for this?
