New Phoca user - User Upload doesn't work

Hi All... hope you can help.
I have set up a Front End user upload on my site and am finding two problems:
I am able to upload and publish pictures using the Administrator access, no problem...
When I try to add pictures from the FRONT end it just doesn't work - no file is uploaded (and no error message shown)
When I try to upload using the Upload Multiple Files tab, I get the error message "User Folder (Category Folder) Not Defined" and when all three fail I get the return "Count of not uploaded (failed) images: 3"
There is, however, nowhere for the Front End user to designate a User Folder as per "User Folder (Category Folder) Not Defined"
Any clue as to how I can rectify this?
I have limited User Upload to Registered users only - but once logged in ANY registred user can "delete" or "unpublish" ANY uploaded picture...
Obviously I don't want this level of control for people to delete other people's uploads (although no-one can upload from the front end yet, as per my first problem)...
What do i need to do to stop this from happening (or only be be available to the User who uploaded the picture)
