I just uninstalled Phocagallery v1.8.8 (completely?) then installed v2.0.0 fresh.

Now no matter what parameter settings I change I cannot display the slideshow buttons. It also seems that other settings changed (I have confirmed that they do write to the database tables), other parametes are not updating also.

What am I doing wrong?

If you have uninstalled old version, all settings were removed, so new will be added... try to resave the settings in parameters component for Phoca Gallery Menu link... see parameters in Parameters Component in menu link and click on "yes" to display buttons in detail view...
