Hiding categories in 3.1.5

Hi,
I recently migrated from Joomla 1.5 to 2.5 including the upgrade to Phoca Gallery 3.1.5. Thanks to the good documentation I was able to transfer all data to the new installation. Unfortunately I recognized a change in how menu items for "List categories" work.
In my previous installation with Phoca Gallery 2.8.1, I was able to hide specific categories in the menu item options. How can I achieve the same behavior with Joomla 2.5 and PG 3.1.5 ?
