Different settings for different guestbooks

Is it possible to do that?

I would like to have 2 guestbooks: 1st for guests to leave their comments and 2nd as a "Contact Us" form (with no posts visible to others).

Hi, this is possible, you will create two guestbooks and two menu links to guestbook comonent.

If you are using Joomla! 1.5 you can set different parameters for each guestbook.
If you are using Joomla! 2.5 and you want to use different parameters for each guestbook, you need to look at this guide:
